Anyone who’s eaten crustaceans has observed this. When you crack into a lobster, or shrimp, or crawfish, you’ll see that they have their guts running down their back (you might know this as the “poop chute”), and their nerves on their belly. In this video we’ll take a trip 780 million years back in time to find out why.
